Our Cookbook Blog

Our Cookbook ~ What We Cook, is a compilation of every recipe we (Janice and Carissa) cook - recipes from our cookbook collections, our recipe boxes, and our heads! We set up this blog for friends and family who have our cookbook to let them see pictures we post of the recipes in the book, and also for us to note any corrections, revisions, or additions to What We Cook. We encourage people who are cooking our recipes to let us know how the recipes turn out and any suggestions they might want to make.

In addition, we will be sharing some of our new recipes (along with pictures) that are not in our cookbook. We hope you will help us out and test recipes and give us your comments.

Recipe Corrections



White Chocolate Macadamia Cookies, pg 220
These are thick cookies that don't spread out much, if you want them thinner and crispier, add an extra egg yolk or even whole egg.  


Overnight Spinach Manicotti, pg 99
The recipe says to use 5 cups of marinara, but you just need 4 cups which comes out to 2- 24oz jars


Biscotti: Unbeatable
In step 1, do not reduce oven temperature to 300 degrees. Keep oven at 350 to toast the almonds, and then to cook the biscotti.
In step 3, divide dough into 2 pieces, and roll into logs about 12-14 inches long. Pat logs down to about 1 inch thick.

Chocolate Chip Coffee Cake, pg. 250
In step 3, disregard the 8x8-inch baking pan, and use a 9 x 13 baking pan.  Bake at 35-40 minutes.


Stir-Fry Sauce (lettuce wraps), pg.144
In the ingredient list, change 1/4 cup water to 2 tablespoons.

Nockerlin, pg. 170
In the list of ingredients, 12 tablespoons of milk is more easily measured as 3/4 cup milk.
In step 1, the third sentence should read: To the creamed butter, add flour alternately with the egg mixture.

Carissa's Blueberry Muffins, pg. 291
Change the baking time, in step 4, to 15 to 18 minutes.

Italian Wedding Soup, pg. 49
The amount of chicken broth needs to be more than the 4 cups listed. Change the chicken broth to 6 to 8 cups, depending on if you prefer your soup thick or brothy.

Blueberry Crisp, pg. 249
Oven temperature should be 350 degrees. Makes 4 servings.

Swedish Crumb Coffecake, pg. 262
This cake needs at least a 9-inch pan--an 8-inch pan will not cook the center. Other good pan choices are an 11 x 7-inch dish, or a 9-inch round cake pan. If your edges are browning before the center cooks, lower the temperature from 375 degrees down to 350 degrees and cook the full 35 minutes or just a few minutes more. If you want to use a 13 x 9-inch dish, then you will only need to cook the cake for 23 to 25 minutes.

Banana Nut Bran Muffins, pg. 305
The baking time needs to be adjusted on this recipe. Please change it to 15 minutes to bake, (rather than 20 to 25 minutes as stated) then check with a toothpick to see if it comes out clean. 


Peanut Butter Chocolate Chip Cookies, pg. 214
In the list of ingredients, 1 1/4 sticks butter (3/4 cup) is wrong. The amount should read: 1 1/4 sticks butter (10 tablespoons). Also, vanilla extract is listed as 2 tablespoons--that should be corrected to 2 teaspoons.

Tasty Italian Chicken, pg. 137
We suggest that you double the sauce in this recipe.
On step 1, the second sentence should read: Stir in broth, tomato paste, bay leaf, and Italian seasoning.
Also, Servings should be change to 4, instead of 6

Granny's Texas Sheet Cake, pg. 235
Step 1 should read: Combine first 5 dry ingredients together in a large bowl.

The corrections below are only for cookbooks from the first and second printings.  You can find which printing lot your cookbook came from at the bottom of page 10. If there is no mention of printing number, the book is the first printing. Second and third printings are noted.


Spanish Rice, pg. 103
Step 1.The first sentence should read," In a large skillet, heat oil over medium high heat; brown onion and yellow pepper."

Penne Pasta with Roasted Veggies, pg. 100
At the end of step 2, please add for the last line: Cool vegetables slighty then cut into bite-size pieces.


Spicy, Healthy Meatloaf, pg. 171
This recipe calls for 1 1/2 cups whole-grain bread crumbs: It might be helpful to mention that it takes about 3 slices of bread to make this many fresh crumbs. Another note: I tear hunks of my bread and toss it into the food processor and just let the food processor do it's thing for a minuet or more, till it becomes soft even crumbs. It is so easy and fast!

Saucy Mushroom Pork Chops, pg. 186
The ingredient list should include 1 Tablespoon olive oil to saute the onion and mushrooms in.

Peanut Butter Fiber Balls, pg. 259
1/2 box of dates from the ingredient list, actually means 4 ounces chopped dates. Also, the correct number of balls this recipe makes is about 30 balls


Aunt Judie's Swedish Limpa Bread, pg. 274
In the first step of this recipe we have a spelling correction--oops! The word Kneed, should of course be spelled knead.


On step 2, we need to note that the risen dough is punched down before it is shaped into loaves. Also, the time to rise before baking is more like 1 hour rather than the 45 minutes stated.


And one final note on this recipe: feel free to cut the recipe in half. This really does make a LOT and can be hard to manage. This bread recipe is easy to halve. 


Also, we heard we spelled Aunt Judie's name wrong in the cookbook! Oops! Should be Judie, NOT Judy!


Drew Jensen's Pork Jambalaya, pg. 175
Step 1 tells you to season the meat as it browns by sprinkling with extra salt, pepper, cayenne, and Tony's.  This is not quite right: this sentence should read as follows---Season the meat as it browns by sprinkling with extra black pepper and Tony Chachere's Cajun seasonings. The salt and cayenne is not needed!

Catherine's Cheese Scones, pg. 276
On step 2 in the instructions, the first sentence should read,…Measure the flour, baking soda, baking powder, cayenne pepper, and salt. (The listing of salt in the instructions was left out)

Penne Pasta with Roasted Veggies, pg. 100
On step 2, an additional last line should read, Allow vegetables to cool enough to handle, then chop into bite-size pieces.


Roasted New Potatoes with Rosemary, Garlic, & Olive Oil, pg. 102
In the ingredient list the amount for the salt should read, 1 1/4 teaspoon, NOT 1/4 teaspoon.

Yeast-Raised Pecan Waffles, pg. 303
Instead of 1/2 cup whole wheat flour, change to 1 cup of whole wheat flour. This makes the consistency of the batter much better.


Asparagus, Potato, and Leek Soup, pg. 33
The last paragraph with the variation needs to be reworded to this:
VARIATION: You may substitute broccoli for the asparagus. If so, cut the florets into small pieces and set aside to be sauteed till tender crisp for the garnish. Cut stalks into 1/2- inch pieces and boil with the
potatoes and continue on with the recipe as directed in Step 2.


Orange-Apricot Sweet Bread, pg. 321
Please change your books list of ingredients to 2 full eggs (instead of 1 egg and 1 yolk), and also up the baking powder (actually misspelled in the book--oops!) to 1 teaspoon (instead of 3/4 teaspoon).
