Our Cookbook Blog

Our Cookbook ~ What We Cook, is a compilation of every recipe we (Janice and Carissa) cook - recipes from our cookbook collections, our recipe boxes, and our heads! We set up this blog for friends and family who have our cookbook to let them see pictures we post of the recipes in the book, and also for us to note any corrections, revisions, or additions to What We Cook. We encourage people who are cooking our recipes to let us know how the recipes turn out and any suggestions they might want to make.

In addition, we will be sharing some of our new recipes (along with pictures) that are not in our cookbook. We hope you will help us out and test recipes and give us your comments.

Perfect Roasted Carrots

This recipe isn't in the cookbook, but it is one I have been making regularly since we printed the cookbook. It is a yummy way to get carrots in your diet. You roast the carrots till they get slightly caramelized on the edges, they get super sweet as they roast. I got this recipe from Ina Garten and changed it slightly, though the method is the same.

Tonight for dinner we had spaghetti, I had a handful of these roasted carrots leftover from dinner last night, so I diced them up small and added to the spaghetti sauce, the kids never knew what hit them! They got veggies and didn't even know it, and it added great flavor. For the recipe go to the tab at the top of the blog labeled "NEW RECIPES". Enjoy! --Carissa

Oh, in case you are wondering why you haven't seen a post in a while from my mom....she is in Tyler sick with pneumonia. So, not much cooking going on in her kitchen right now! Pray that she can get better fast. She is getting tired of just laying in bed all day. Some Get Well Emails might be nice.....

Whole Wheat Belgian Waffles


This is a new recipe that I have made several times now, so I thought I'd share it with you guys. It doesn't have many ingredients so it is fast to whip up. I add several dashes of ground cinnamon to the batter for a unique taste. For the recipe check out the "New Recipe" tab at the top of the blog!

Chicken Piccata & Polenta comment from Sharea...

I made your chicken piccata and polenta tonight for dinner. Huge hit! I wasn't sure about the polenta.... I liked it, but should it be creamy or thick. Mine was pretty thick, I wondered if I should have added more water??? Stone said he loved the grits!

Spicy Tilapia


For dinner tonight we had Spicy Tilapia. It is a new recipe that I have made a couple times now, and I really like the flavors. So, I thought I'd share the recipe with everyone. Cilantro Pesto Pizza

This Cilantro Pesto Pizza has no page number, as it is not officially one of our recipes in the cookbook. Well, actually, the cilantro pesto is on the cookbook on page 188. But when I made it for just two servings--even with cutting the recipe down, I had too much pesto left over. So this pizza is the result!
The pesto lasts several days in the fridge, just like it is, and stays nice and bright green. I layered my pizza ingredients on it--just whatever was in the fridge.
This pesto made really, really good pizza!
