Our Cookbook Blog
Our Cookbook ~ What We Cook, is a compilation of every recipe we (Janice and Carissa) cook - recipes from our cookbook collections, our recipe boxes, and our heads! We set up this blog for friends and family who have our cookbook to let them see pictures we post of the recipes in the book, and also for us to note any corrections, revisions, or additions to What We Cook. We encourage people who are cooking our recipes to let us know how the recipes turn out and any suggestions they might want to make.
In addition, we will be sharing some of our new recipes (along with pictures) that are not in our cookbook. We hope you will help us out and test recipes and give us your comments.

Beef & Turkey Enchiladas with Homemade Sauce ~ page 153
These are very filling enchiladas! I used corn tortillas instead of white flour tortillas, like Carissa uses, just because I love the taste of corn--but I used 2 tortillas for each enchilada, just to help the "roll" stay together. One corn tortilla almost seems too thin, causing the tortilla to melt into the filling if cooked too long. But two tortillas rolled together work great--although does make a serving fill you up fast! I served these with some of our leftover Spanish Rice (page 103) that I had in my freezer. A simple "salad" of just diced tomatoes and avocado made for a fast, delicious dinner! Oh, one more note--feel free to add extra grated cheese if you want these cheesier--and freeze any extras as they are just as good the second time around!
