Our Cookbook Blog

Our Cookbook ~ What We Cook, is a compilation of every recipe we (Janice and Carissa) cook - recipes from our cookbook collections, our recipe boxes, and our heads! We set up this blog for friends and family who have our cookbook to let them see pictures we post of the recipes in the book, and also for us to note any corrections, revisions, or additions to What We Cook. We encourage people who are cooking our recipes to let us know how the recipes turn out and any suggestions they might want to make.

In addition, we will be sharing some of our new recipes (along with pictures) that are not in our cookbook. We hope you will help us out and test recipes and give us your comments.

Mediterranean Chicken Pasta ~ page 133

This is soooo fast and easy to throw together! The trick is to have all the ingredients measured and cut up and ready to go. It goes together fast! The leftovers have great flavor. We were fighting over them! Even my kids gobbled it up. I used sun dried tomatoes in oil and thought they had a little more flavor than dehydrated ones....you just gotta pay a touch more for them. The other great thing about this meal is that you can have all these ingredients on hand. I bought the stuff to make this 3 weeks before I actually got around to making it. The feta cheese lasts for months. I did have fresh basil in my garden, but I think dried basil would do fine in a pinch. Give it a try! --Carissa
