Our Cookbook Blog
Our Cookbook ~ What We Cook, is a compilation of every recipe we (Janice and Carissa) cook - recipes from our cookbook collections, our recipe boxes, and our heads! We set up this blog for friends and family who have our cookbook to let them see pictures we post of the recipes in the book, and also for us to note any corrections, revisions, or additions to What We Cook. We encourage people who are cooking our recipes to let us know how the recipes turn out and any suggestions they might want to make.
In addition, we will be sharing some of our new recipes (along with pictures) that are not in our cookbook. We hope you will help us out and test recipes and give us your comments.

Can I comment on my own post? Sure! I just ate a 3 day old Banana-Coconut Crunch Muffin, and it was still as good as right out of the oven. The bananas keep it nice and moist inside. You do need to heat your leftover muffins in either a toaster oven or your big oven for about 8 to 10 minutes at 325 degrees. This will re-crisp the top, and make it crunchy again. If you just put your muffin in the microwave, you will miss out on the lovely crunchy top!
These muffins were absolutely delicious! We were having breakfast for dinner at our small group and I was originally going to make homemade cinnamon rolls. I changed my mind after seeing Janice's pictures of these muffins! It might look intimidating to make them, but they are super easy! And they do turn out wonderful! I didn't have a single muffin left when the group was over! It was a hit! Thanks JJ for the recipe!
Love,
Emily
