Our Cookbook Blog

Our Cookbook ~ What We Cook, is a compilation of every recipe we (Janice and Carissa) cook - recipes from our cookbook collections, our recipe boxes, and our heads! We set up this blog for friends and family who have our cookbook to let them see pictures we post of the recipes in the book, and also for us to note any corrections, revisions, or additions to What We Cook. We encourage people who are cooking our recipes to let us know how the recipes turn out and any suggestions they might want to make.

In addition, we will be sharing some of our new recipes (along with pictures) that are not in our cookbook. We hope you will help us out and test recipes and give us your comments.

Twice Baked Potatoes ~ page 107

These are the perfect make ahead side dish, that is probably why I make them so often. These pics were taken the night I was making them, I didn't actually heat them up and serve them till the next day. Guests are always surprised that they aren't loaded with butter. I use low fat sour cream, so they really aren't bad for you. Below is a picture of a hollowed out potato. I use a grapefruit spoon to really clean out the insides good.

For ease in filling the potatoes I put the filling in a large zipper-top baggie and cut a corner off one of the bottom corners. Squeeze the mashed potatoes into each potato skin without alot of mess. Works great. Enjoy! -Carissa
