I used to always make this with fresh peaches in the summer time...but now I tend to use frozen sliced peaches, and I make it year round. It is so fast and easy, and can bake while you are eating dinner, and be ready to serve hot with ice cream for dessert.
There are 3 steps: melt butter in the baking dish, cook the peaches and sugar on the stove--just to melt the sugar--, and mix up the batter.
The warm peaches go on top the melted butter. One note about the peaches; if I have extra peaches, I will often up the peach amount from 4 cups to 5 or 6 cups. This makes the cobbler juicier. I don't change the amount of batter though, just the amount of peaches. If you do use more peaches, you can add an extra tablespoon of butter for each additional cup of sliced peaches if you like (though it is good either way). Also, you will need to move up to the next larger size dish if you increase the peach amount, or your cobbler might overflow the 9x9-inch dish.
Pour the batter on top the peaches.
The cobbler is put together in layers--don't stir it!
With just 20 minutes in the oven, this is done! Eat any leftover cobbler for breakfast and pretend it is breakfast fruit.
