Our Cookbook Blog

Our Cookbook ~ What We Cook, is a compilation of every recipe we (Janice and Carissa) cook - recipes from our cookbook collections, our recipe boxes, and our heads! We set up this blog for friends and family who have our cookbook to let them see pictures we post of the recipes in the book, and also for us to note any corrections, revisions, or additions to What We Cook. We encourage people who are cooking our recipes to let us know how the recipes turn out and any suggestions they might want to make.

In addition, we will be sharing some of our new recipes (along with pictures) that are not in our cookbook. We hope you will help us out and test recipes and give us your comments.

Peanut Butter Fiber Balls ~ page 259


These are a favorite around my house. With me being pregnant they are a great energy snack since I am trying to stay away from too many carbs so I don't get too huge! My girls eat them for snacks all the time. I use Agave Nectar instead of honey....just a little lighter taste and less calories. To make the balls more firm for traveling in my purse in a zip-top baggie I cut the honey amount down a little. Below is a picture of my container I keep in my fridge for easy snacking!

This is probably my favorite recipe in the cookbook! I have these in my fridg ALL the time! I developed this recipe when I found I needed more fiber in my diet--plus I wanted something "sweet" to eat that was not a bakery item high in fat and sugar. These peanut butter balls kill the sweet craving and keep me from eating a lot of cookies (which I love!).
